cornVitamin E is a fat soluble vitamin. The main function of which appears to be that of an anti-oxidant.  Anti-oxidants protect your cells against the effects of free radicals, which are potentially damaging by-products of energy metabolism. These free radicals can damage cells and may contribute to the development of cardiovascular disease and cancer. Additionally, alpha-tocopherol has been shown to inhibit blood platelet aggregation (forming of blood clots) and to enhance vasodilation (relaxation or opening of a blood vessel).

berriesSevere vitamin E deficiency results mainly in neurological symptoms, including impaired balance and coordination, injury to the sensory nerves, muscle weakness, and damage to the retina of the eye.

Good sources of vitamin E are vegetable oils (palm, sunflower, corn, soybean, and olive oil), nuts, sunflower seeds, berries, kiwi fruit, whole grains, peanut butter, and green leafy vegetables.
